In essence, farm-to-table means that food comes directly from our own cultivation or from local producers to the table. Farm produce tastes better the fresher it is processed and consumed, which is why we place great value on short distances and real taste. In addition, it is close to our heart to make the cycle of our farm and our gardens, the families can experience first hand.

The Sonnwies is surrounded by fascinating rock formations, lovely alpine pastures, shady forests and extensive meadows and gardens. The good things are very close and we make this original pleasure for families through the Sonnwies concept "farm to table" to experience up close.
Family time out with farm to table philosophy
At Sonnwies, young and old can discover and experience the farm and the 1200 sqm Culinary Garden up close. In the large-scale, in-house garden you will find a comprehensive variety, including vegetable rarities that have fallen into oblivion and are cultivated again here. The Culinary Garden and the numerous berry beds around the house are tended, watered and harvested daily by Monika, our gardener from Lüsen, and the farm team. During weekly garden tours, children can immerse themselves in the wonderful world of plants and help out. Watering, harvesting and marveling at little insects together. The entire garden is organic: pesticide-free, healthy, and sustainable. So children can taste the picked berries directly without having to clean them beforehand.
Focus on the essentials. Less, but all the more high-quality. These guiding principles are firmly anchored in our philosophy and are also reflected in our food concept. For example, as a perfect introduction to the evening dinner, a loaf of homemade bread, accompanied by freshly stirred farm butter made from cream from the alpine pasture and a salad bowl with freshly harvested ingredients from the garden comes to the table.
Especially in summer, nature impresses with a special blaze of color and delicious variety. Week after week, new products are ready for harvesting, which are then processed in the hotel. The ingredients, still covered with earth, are carefully washed in the manufactory. Individuals are processed there directly: Jams, herbal salts, teas, etc. The remaining products are brought to the kitchen, where they are integrated into the menus fresh on the day. This requires close coordination between the gardener and the chef. Together they plan which products are delivered when and in which quantities, as well as which dishes are put on the menu, so that the fresh garden products are perceived as the main protagonist on the plate.
A buttered bread may seem very simple at first, but it is precisely this simple combination of two homemade products that provides an incomparably pure taste, which recalls our roots. Since time immemorial, butter made from the cream of fresh South Tyrolean mountain milk and bread baked in a wood-fired oven have been part of the South Tyrolean snack, also known as Marende. It is precisely from this tradition that we understand our responsibility to preserve the pure taste and to bring the passion as well as the value of this delicious combination to the plates.
Teaching natural cycles in a playful way
When we talk about cycles, we mean much more than just the path of fresh produce from the garden to the kitchen. Sonnwies Farm to table means transparency, active experience, helping out and understanding how natural products are processed and what can be created from them. Our concept is always oriented towards reinterpreting the classic farm to table concept for families and especially children. In doing so, we play the principle in all areas. In the restaurant, products from the garden are put on the table, in the Kids Club there are crafts with natural materials, in the SPA there is the scent of the forest and in the manufactory there are family cooking classes with typical South Tyrolean dishes over an open fire.

The time spent at Sonnwies is characterized by numerous small and larger features, with nature always playing a central role. Walking barefoot through the garden and forest, spending time up close with the animals, helping the farmer and gardener with their daily chores, getting fresh eggs from the henhouse or getting your hands dirty shaping traditional South Tyrolean dumplings. The family cooking classes in the manufactory are a very special highlight, to homemade you have a much stronger connection and children are happy about what they have created. All these experiences remain in the memory for a long time and are recorded in the family album forever.
